
Regardless of the cooler temperatures outside, we can always warm up by preparing a tropical seafood dish from the British Virgin Islands. Our friends from the Charter Yacht Society BVI have shared one of their island favorites. It's a mouthwatering and delightful dish to please any palate!
Zingara Blackened Seared Tuna
INGREDIENTS
Tuna Steaks
Blackened Seasoning:
2 tsp ground paprika
2 tsp onion powder
2 tsp garlic powder
1 tbs granulated sugar
2 tsp salt
2 tsp black pepper
1 tsp dried oregano leaves
1 tsp dried thyme leaves
3/4 tsp ground cumin
1/2 tsp ground nutmeg
Pineapple-Orange Salsa:
1 tsp finely shredded orange peel
2 oranges pealed, sectioned, chopped
1 chopped fresh pineapple
2 tsp chopped green onion
1/2 jalapeno pepper, seeded and finely chopped
Cover and chill for up to 24 hours
INSTRUCTIONS:
Prepare blackened seasoning by mixing ingredients together and store in a dry container
Prepare Pineapple-Orange Salsa and refrigerate
Pat thawed tuna steaks dry and generously sprinkle blackened seasoning on both sides 15 minutes before searing the tuna.
The longer the tuna sits in the blackened seasoning, the greater the flavor.
Heat 2 tablespoons of olive oil in a large skillet on medium high heat.
When pan is hot, gently put tuna in the pan and cook for approximately 3 minutes on each side for rare tuna.
Cut tuna in half and serve on the plate with Pineapple-Orange Salsa on top. Enjoy!
